ice cap variable speed fans

I bought a pair of 4" ice cap variable speed fans. When I hook them up, do i place the temp probe in the water or leave it out?

I run mine somewhere around the lights (not too close to melt them) or where there is the most heat under the hood, not in the water I think it is for air temp. by design.
