What is the Rolls Royce of Live Rock? What is the best sand to use and how deep?

When it comes to LR its pretty much all the same, with the exception of florida LR as that seems to have a lot more algae and pests. SO when you are looking to choose some just go for what you like the look of in your tank, kind of like buying a car for body style. With Sand you want to go with small diameter argonite but its best to do a little research on its limitations, so do a search on RF on DSB's you should get all the info you need with that.
