Any ideas on how to keep oolite from totally clouding the water at the slightest touch? (Other than replacing it with something a little coarser?)

Did you rinse it first? I rinsed mine by putting about 5" in a 5 gallon bucket, put in the hose and swirl it gently with my hand. That gets rid of all of the fine granules. I still had some cloudines when I put it in the tank, but it settled and haven't had a problem since. If you put just a little crushed coral on top, not to cover it but just sprinkle it in that helps for what is already in the tank, and it looks nice too.
