Where would be the best place to splice a psi meter into a RO/DI Unit (feed line, waste water line, etc.)? Does it even really matter?

I hooked it up temporarily to the waste water line and was getting 60 psi.

Does it even really matter?

Feed line, as you are looking for the pressure into the RO, as RO is a function of pressure. The higher the pressure the more efficient it is ie., less water wasted and purer water.
 
If you had pressure on your waste line, something is wrong (unless you ran the waste line into the pressure gage with no outlet).
 
Don I saw that too but thought it may be just a typo. The waste line should have almost 0 PSI, as it is just water draining.
