how much gunk is a skimmer supposed to consume and remove in a week? (obviously if set up correct)

Depends on many factors like the bioload, which other filtration methods are used on the same system, how much waste is produced, what type of skimmer it is etc. One skimmer may pull out more junk than another, but even then it's hard to say what any skimmer would pull out in a week. JMHO

it depends upon the size of tank, bioload, and feeding habits...
what size tank? heavy bioload?
and what kind of skimmer?
