How wet should i run my skimmer. I currently empty it once a week is that too little?

not knowing anything about your tank or skimmer, i would say yes, that is probably not enough.....

what skimmer is it??

a eshopps psk 75 in sump

No fish just some zoas and lps

Yeah id raise the water line in it so its like half full every couple days.

i'd set it to fill the cup every 4-5 days personally... you should have no issues skimming a little wet with that skimmer.
but once u have fish and regular feedings, it will probably naturally increase as well.
