Polyps

What makes the polyps on SPS come out more. What I mean by that is my SPS use to be pretty hairy or more polyps came out and now they don't come out as much any more.

Test your tank, did any of them change recently? Any other changes? If you can answer this, that might help out more.

Nothing has changed and the reason why I find it weird. Unless it's being irritated by fishes or hermit crabs could be reason for polyps not extending as much?

Honestly there are two many variable. SPS extend their polyps for different reasons. It may just be the simple fact that they are happy and getting what they want. Could be just the oposite. Polyp extension is not a great judge of sps health.
